Ingredients

to make dudhi halwa:

  • 2 cups Bottle Gourd ((lauki/ghiya/doodhi), grated)
  • 1 cup Full fat Milk
  • 4 tbsp Ghee
  • 2-3 Green cardamom
  • 6-7 tbsp Sugar
  • 2 tbsp Almonds (roughly chopped)
  • 3 tbsp Cashew nuts ( roughly chopped)
  • 100 g Khoya (mawa) ( mashed or grated)
  • ¾ teaspoon cardamom powder

To garnish dudhi halwa:

  • Slivered almonds and pistachios
  • Silver vark (optional)
  • dried rose petals (optional)

Instructions

  • To begin with, first, melt ghee in a pan.

  • While the ghee heats, add green cardamom and fry for few seconds

  • Then, add grated lauki and saute on high heat for 3-4 minutes or until it softens further.

  • After the lauki is sauteed well, add milk and stir continuously for 1-2 minutes.

  • When the milk dries, then add sugar and mix well, stir until sugar melts.

  • Then, add almonds and cashew nuts, mix and cook for 1 minute

  • Finally, add khoya and cardamom powder, stir continuously for 1-2 minutes until khoya blends well to reach the required consistency of halwa.

  • Best dudhi halwa is ready to serve. Dish out and garnish with almonds, pistachios and silver wark
